Cake in a Coffee Mug Recipe

Chocolate cake in a coffee mug isn't anything revolutionary. I just noticed recently this was trending, and I had to give it a shot. Here's how it went! 

Also- full disclosure, it wouldn't have even crossed my mind to make such a thing if it hadn't been for the fact that..

1. I can't justify baking an entire cake for a family of four.. when my hubby doesn't even eat sweets.

and 

2. Who wouldn't want to TRY making cake in a coffee mug at least once!?

Ok so let's get into it.. these are the ingredients that I used. Also minor detail- I baked this an oven cause I don't own a microwave. By choice. I'll leave the microwave directions down below just in case.

Ingredients:

  • 4 Tablespoons sugar
  • 4 Tablespoons all-purpose flour
  • 2 Tablespoons cocoa powder (use high-quality for the best flavor)
  • ⅛ teaspoon salt (a small pinch)
  • ⅛ teaspoon baking soda (a small pinch)
  • 3 Tablespoons milk (I used cow's milk)
  • 3 Tablespoons butter (You can use oil but butter will taste better)
  • 1 small egg 
  • ¼ teaspoon vanilla extract 
  • Optional: 3 Tablespoons chocolate chips, chopped candy bars, or other mix-ins
so glad I had a little helper..

Directions for OVEN and MICROWAVE

1. Preheat oven to 350°F
2. Coat oven safe mug with a layer of butter
3. Mix dry ingredients (Flour, sugar, cocoa, salt& baking soda) together with fork or whisk in large bowl
4. Slowly begin to add milk, oil vanilla and 1 egg. Mix thoroughly.
5. Using a spatula, pour the contents into your buttered mug. 
6. Bake in oven at 350°F for 20 minutes.. according to how hot your oven cooks and if you want a molten or thourghly cooked cake.  I like to use a clean toothpick to test the doneness in the center. If it comes out clean- it's fully baked. If it comes out runny, well.. it's runny.
7. If microwaving- MICROWAVE on high for 1-3 minutes. I might suggest starting at 1 minute and then microwaving for 30 additional seconds until reaching your desired doneness. 
8. Please note that your mug will be exceptionally HOT and your cake will continue to cook in it when removed from oven or microwave.
This turned out so good. I wish I took pictures of the inside!! It was fluffy and delightful and my daughters just ate it all up.
